• 55% Pinot Noir, 33% Chardonnay, 12% Pinot Meunier • Sourced from the estate's Findon Park Vineyard planted in 2006 on flinty chalk-based soils • Hand harvested • Each variety is gently whole-bunch basket pressed then goes through primary fermentation in neutral French oak • Lees aging for 8 months in French oak then blended and bottled • Slow, cool secondary fermentation and lees aging in bottle for 5 years • Riddled and disgorged in 2021 with a dosage of 8g/L
