This wine is sourced from cooler coastal regions of California, with a richly developed character inspired by our favorite Champagnes. No. 2 bottling is a blend of Chardonnay and Pinot Noir, produced on Méthode Traditionelle. It is non-vintage, affording greater ability to achieve our desired style. Features soft bubbles and freshness that yields to creaminess from extended aging.
Blend: 56% Chardonnay, 44% Pinot Noir.
This wine is bright and active. Its fresh and lively aromas and flavors of core fruit and its shading of autolysis should pair it superbly with fresh salmon sashimi handrolls.
