Elyse Cabernet Sauvignon Holbrook Mitchell Vineyard 2014

The nose is full of powerful dried black fruits and cassis with hints of roasted bell pepper and soft leather that is the hallmark of great Cabernet Sauvignon. On the palate there is a beautiful chocolatey core that shows spice from the oak and some dried vanilla bean.  The tannins are aggressive on the front end, then they begin to fade into the chocolate and carry the wine throughout the next few minutes with a crazy delicious finish.

From a vineyard in the western hills of the appellation, this wine shows lovely cool-climate characteristics without skimping on body or ripeness, expressing balance and grace. Tightly wound, it leans savory and firm, with clove, tobacco, black licorice and tomato leaf flavors and big tannins that call for further ageing.
