DESCRIPTION
• Guava eau-de-vie produced in Agua Temazcal, Cuicatlán, in the Sierra Norte of Oaxaca • Maestro Destilador Rommel Krassel • Distilled from 100% guayaba (guava) sourced near the distillery in the town of Santa Maria Tlalixtac • Fermented in stainless steel for 10–12 days using Champagne yeast • Distilled twice in copper alembic pot stills • Rested in glass 1 year before bottling • A vivid nose of dehydrated guava and butterscotch mingles with white orchids and candy sprinkles. A richly textured palate balances silky custard with fibrous fruit and a throughline of almond paste with a peppery finish. • Approximately 200 liters produced each year • 42% ABV One of Mexico’s most iconic tropical fruits, guava (guayaba, or Psidium guajava), is native to Central and South America and has been a staple of Oaxacan cuisine for millennia. This delicate eau-de-vie is distilled entirely from ripe, sweet pink guava, yielding a complex and luxurious spirit which continues to open and blossom as it breathes in the glass.
