Manual harvest to select only the best bunches and keep the freshness of the grapes. Destemming and complete sorting. The grapes will be lightly crushed, then they will be placed in thermo-regulated vats. The maceration will last between 20 and 30 days.
The nose reveals scents of garrigue and liquorice, the mouth is on raspberry and cherry with its persistent and peppery finish.
