Très Girard is a climate classified at the village level that Frédéric bottles separately from the Morey-Saint-Denis bottling due to its additional depth of flavor and firm tannic structure. Aromas of violets and plums are followed by a richly textured palate, and sturdy tannins make this wine stand out from most village-level wines. The wine is a pure expression of its terroir thanks to its élevage in a combination of used oak and clay jars.
Red Burgundy might be the world’s most flexible food wine. The wine’s high acidity, medium body, medium alcohol, and low tannins make it very food-friendly. Red Burgundy, with its earthy and sometimes gamey character, is a classic partner to roasted game birds, grilled duck breast, and dishes that feature mushrooms, black truffles, or are rich in umami.
