Being midway between fruity & grilled, it affirms characteristic of oxidation: prunes, coffee, Moka. It is a classic accompaniment for desserts of dark chocolate, but also perfect with blue cheeses (Fourme d’Ambert, Bleu d’Auvergne, Roquefort , Gorgonzola or the King of British cheeses – a good Stilton). All flavors ‘conspire’ to make it sing : dried or grilled fruit, cinnamon, fig, bitter orange, almonds.Being midway between fruity & grilled, it affirms characteristic of oxidation: prunes, coffee, Moka. All flavors ‘conspire’ to make it sing : dried or grilled fruit, cinnamon, fig, bitter orange, almonds…Alcoholic Degree : 16% Volume Varieties : A mixture of Grenache Noirs, Grenache gris & Carignan Vinification : The harvested grapes are initially partly split and then subjected to ‘mutage sur grains’ Élevage : The wine spends one year in ‘bonbonnes’ as part of the maturing process before being further aged in oak barrels for 4 to 5 more years. This is an ageing process based on oxidation, which seals the characteristic of each vintage. ‘Reserva’ is a traditional Banyuls.
