The grapes, coming from young vines on schist terroirs, are picked by hand at the first stage of maturity, the berries are pale yellow and crunchy to produce a wine with aromas of fresh fruit. In the cellar, we intervene very little, respecting the local grapes: aging in vats on fine lees for 12 months, protected from oxygen.
