Rosé du Castel is a blend of early picked Merlot, Malbec & Cabernet Franc grapes. The pale color of the wine is the result of a quick press and a short skin contact. The fermentation was long at low temperature.
60% Merlot, 22% Malbec, 18% Cabernet Franc. Domainde du Castel is a small estate of 37 acres in Ramat Raziel at an altitude of 2,297 feet, west of Jerusalem. This wine is the result of an early harvest. The juice was fermented in a stainless steel tank at low temperature to perserve its fruitiness.
The light color bears evidence to the fast pressing and the short contact time the new wine has had with the grape skins.
The fermentation period is long, under cold temperatures, resulting in a light and refreshing yet prominent wine. The rosé bears an aroma of tropical fruit, peach and roses, and goes down with a lychee, lime, grapefruit and peach flavor. The recommended serving temperature is 8 degrees Celsius.
