The fresh citrus notes jump out of the glass, followed by aromas of passion fruit and apricot. The taste is elegant with notes of apple and peach. The finish is long thanks to the fresh malic acids and leaves the mouth clean.
From the Sèvre et Maine region in the west of the Loire, Stéphane David and Sébastien Duvallet own about 40 hectares of the Clos du Ferré vineyard. The objective of these men is simple; to extract only the best of what this vineyard has to offer. The vineyards are ideally situated on the south-south west with a relatively cool soil so that the grapes make optimal use of a longer ripening period. Traditionally, after alcoholic fermentation, the wines are aged for several months on the remains of the yeast cells 'sur lie', which makes the aromas more complex. Due to the proximity of the ocean and the type of soil, the wine develops a characteristic salty character. This ensures that this type of wine fits perfectly with seafood.
