This Pinot Noir from Ballorin comes from the "Les Echezeaux" vineyard, located in the municipality of Marsannay-la-Côte. The vines are about 40 years old and rest on a clay-limestone soil, with the presence of small shells. The harvest is manual and the fermentation of the Marsannay "Les Echezots" from Domaine Ballorin et Fils is spontaneous in cement and fiberglass vats. Aging on the fine lees in pièces for 12 months. Minimal addition of sulfur.
At sight, the wine is bright ruby red. The nose expresses elegant sensations of wild berries and purple flowers, with a beautiful, iodized trace and a great spicy appeal. In the mouth, it is dry, full-bodied and balanced: it spreads out on fruity notes, ending harmonious and fine. Best pairs with grilled seafood and poultry.
