White Burgundy, with its rich texture and toasted flavors, pairs well with white fish and shellfish and its naturally high acidity can counterbalance cream-based sauces. Oak-aged Chardonnay from warmer climates lends itself well to grilled fish, starches, butter, and toasted nuts.

The 2017 Puligny-Montrachet Les Clavoillons 1er Cru is very closed and unresponsive on the nose, missing a little energy compared to the more expressive Champ Gains. The palate is much better thanks to a taut line of acidity and its harmony. It offers delicate touches of citrus peel, apricot and orange pith.
The 30% new oak is nicely integrated and it gently fans out on the finish. Fingers crossed that the aromatics will open once in bottle, so give it two or three years to settle.
