Desert Wind Cabernet Sauvignon 2017

This wine utilized open top fermentation with twice daily punch downs to carefully extract the desirable amount of tannin, color, and flavors from the skins. After fermentation, the wine spent 14-15 months aging in a barrel with some French oak to complement that dark fruit flavor. The resulting wine is rich and complex with aromas of dark cherry, currant, and vanilla bean.

The palate is full of fruit with robust tannins and a moderate acidity.
