The harvest, exclusively manual, takes place during the end of September and the beginning of October. The carefully selected bunches are collected in crates and are subsequently placed inside a "fruit cellar" where a period of natural drying begins which lasts about 3 months , which favors the concentration of sugars. After pressing and fermentation, the wine ages in wooden barrels for 3 years, until bottling, which is followed by at least two months of aging in the bottle.
Complex bouquet made up of hints of cherries in alcohol, black cherries, plums, licorice and leather. Spices such as pepper and cinnamon and hints of undergrowth. The sip is extremely elegant, harmonious and velvety , but at the same time robust, complex, dry, full-bodied, generous and austere.
