Light yellow colour with a smooth stream of fine bubbles. Soft nose showing citrus honey, red apples and some minerals hidden underneath. With time in the glass it shows more mature notes of what will come with extra cellar time. Softer acidity on the palate with red apples and with a very creamy and smooth honey mid before the very nice and fresh finish showing bitterness of California rock fern (polypody) and lime peel.
This is pretty good from start and is probably perfect to drink over the coming years, it will then evolve with more oxidative notes and become more intense on the palate and showing dark chocolate on the nose.
