Aged white rum produced by St. Lucia Distillers, Saint Lucia's last remaining distillery, in Roseau
Produced in accordance with the Saint Lucia Rum Geographical Indication
Made from 100% molasses
Open fermented for 36 to 45 hours in concrete tanks using proprietary yeast and water from the Roseau River
Distilled in a combination of Coffey column and “John Dore 2” copper pot stills
Aged distillates are matured separately by still and batch for 2 to 3 years in ex to bourbon barrels
Charcoal filtered to remove color
Marshmallow, dried papaya, and sweet aromas of fresh-cut grass on the nose transition to a bright, focused palate of lime zest, young coconut, and brown sugar with a dry finish of vanilla and lingering oak tannin
40% ABV Perfect for Daiquiris, Mojitos, and other rum-based classics, Chairman's Reserve White is a layered and complex blend of aged and unaged pot and column still molasses rums, charcoal filtered to achieve clarity
