
IT'S ALL IN THE DETAILS
Corvina is the base of the great red wines of Valpolicella, and it is pure that we can appreciate its different expressions in color, perfumes and body. The grapes were carefully harvested and placed in boxes for a drying of 20 days. The fermentation maceration lasted about 20 days. After the racking the complete malolactic fermentation is followed.
Jema is a pure expression of Corvina – the region’s signature varietal. Produced from a 3-hectare single vineyard located in the heart of Valpolicella Classico, Cesari’s “gem” is full, supple, and well-balanced with rounded tannins. Cherries pervade.
