Rosso Negroamaro is a wine produced from Negroamaro grapes normally harvested in the first days of October with manual harvesting of the grapes, cultivated with the espalier system and spurred cordon in the countryside of Guagnano. De-stemming, fermentation maceration in contact with the skins for 8-10 days, draining in a soft press and control of the must temperature at 25°C. Before being bottled, the wine undergoes a flash pasteurization treatment at 86°C and immediate reduction of the temperature to 20°C.
This negroamaro wine is a wine with an intense ruby red color with a strong note of spices and licorice on the nose and with a characteristic body and structure typical of the vine. A remarkably balanced and pleasant to drink wine, suitable for grilled red and white meats, important first courses and hard and semi-hard cheeses. It is advisable to taste it at a serving temperature of 18°C, taking care to uncork it at least 30 minutes before serving.
