Candialle IGT Toscana "Mimas" 2019

Josephine and Jarkko Peranen didn't make enough wine to put 'Mimas' through the Chianti Classico tasting panels, so this is instead labelled as an IGT. An intriguing expression of this classic region. It is aged in spherical ceramic Clayvers produced by a small company in Genoa.

Candialle are the only Italian winery working with them. Jarkko describes it as a 'hyper-modern amphora' which allow for slow, steady ageing (micro-oxidation) without adding any foreign flavours. The result is a pure, terroir driven Sangiovese expression with notes of red cherry, plum and dried herbs.
