Varietals: 100% Cabernet Franc
Tasting Notes: Light ruby in colour with a striking bouquet of red berries and exotic spices. The palate follows through with rich and concentrated flavours of sweet cherries, strawberry and raspberry jam, that are balanced by a lively acidity. This wine provides a great harmony
between sweetness and spice. Serve chilled to approximately 12°C.
Food Pairing:
Excellent on its own or when paired with rich foods like foie gras and soft creamy cheeses, including Blue or Stilton, as well as sweet berry desserts and dark chocolates.
Growing Season and Harvest: The frozen grapes were harvested in early December when
temperatures fell between -10 and -13. After settling the juice in stainless steel tanks, cool fermentation was completed in February when the wine was placed outdoors to stop fermentation and complete a natural cold stabilization.
