Soft pressing of the whole bunches to obtain a very clear and clean must. After a first racking, fermentation takes place spontaneously in steel at a controlled temperature. When the alcoholic fermentation reaches 15 g/L of residual sugars, the wine is racked off and bottled with the lees to finish the alcoholic fermentation in the bottle.
Grapefruit yellow with a beautiful opalescence, with a persistent froth that frames the point of contact between the wine and the sides of the glass.
