The Tepeztate agave is cooked in earthen pit ovens and crushed by horse-drawn tahona. Natural yeast is allowed to do its thing in open-top fermenters before a double distillation and resting period.

Well the Mezcal is amazing - 5 star
But it took forever (over three weeks) to receive. Although getting booze in the mail at work is never a bad thing, I think Wine Chateau could work just a little harder getting the product to their customer just a little quicker. Overall happy with the transaction and would buy from them again
