Lovely Chinon-style Cabernet Franc - smooth, IMO benefitted from a touch of blending in a splash of higher acid red. We did not allow it to aerate much, so that may also help... Instant thoughts: black currant, blackberry, gun metal, and pencil lead Paired & enjoyed with simply seasoned filet mignon.
Blackberry on the nose with truffle, green pepper, and black pepper flavors. Was not the perfect match with pork chops, but it was good.
