• Limited release honey-finished small batch bourbon produced by Starlight Distillery in Starlight, Indiana • Batch no. 0001 • Produced using estate-grown, non-GMO corn, rye, and wheat; the malted barley is locally sourced • A blend of a 3-grain mash bill of 60% corn, 20% rye, and 20% malted barley and a 4-grain mash bill of 51% corn, 20% rye, 20% malted barley, and 9% wheat • 7-day closed-top, sweet mash fermentation in stainless steel • Twice distilled in a Vendome brass and copper pot still • Aged a minimum of 5 years in charred new American oak barrels prior to being finished for 4–12 months in toasted, charred oak barrels that previously held honey produced by hives that pollinate the fruits and wildflowers at the Huber estate • Approximately 52 barrels produced • On the nose, light, fresh notes of stone fruits, white flowers, and honey float above generous layers of vanilla and toasted oak.
