The Chignin Mondeuse comes from old-vine parcels that are harvested by hand. The Quenards use partial whole-cluster fermentation, macerating the grapes for up to 15 days.
The then ages in old, neutral oak foudres for a year before bottling. The finished product offers notes of crushed stone, fresh raspberries and fragrant violets.
