The juice comes into contact with the skins and extracts a little tannin from them. In the evening, the must is pressed by muscle power in an old basket press and fermented spontaneously in the oldest barrel.
Tannins in Riesling usually mean criticism, but not here: The powerful wine holds its own against the tannins with an extremely compact fruit and gains enormous structure. It benefits from ventilation, so be sure to decant it!
