EYO's Reposado Rosa begins with 100% estate-grown Blue Weber agave, slow-cooked in traditional stone ovens for 36 48 hours. The roasted piñas are crushed and fermented with wild and proprietary yeasts, then double-distilled in copper pot stills. After distillation, the spirit is rested 9 11 months in lightly charred American oak barrels. For its signature pink hue, a small proportion of extra-añejo aged in toasted French oak is married in at bottling. At cask strength (typically 50 55% ABV), it's cut slightly for a full-bodied finish.
