Vincent and Sophie Morey farm in Chassagne-Montrachet, and this comes from their older vines. Peach and lemon tart with vanilla and light baking spice, or in cooler years pear and apple compote with rosemary and a whiff of anise. Supple, with good energy and a lingering finish. Chassagne makes the broader, nuttier white of the two great Montrachet villages.
