Harvesting is done manually in boxes of 12kg each in the first days of October. The grapes are selected by hand on long sorting tables.

The grapes reach the oak truncated cone vats by gravity: without temperature management and without the addition of selected yeasts, the must completes fermentation and remains macerated on the skins for about a month. The wine evolves on its fine lees for 16 months in small casks and tonneaux, all made of French oak. Bottle ageing follows.
