DESCRIPTION

• Cask strength aged Demerara rum produced by Demerara Distillers Limited at Diamond Distillery, the last remaining distillery in Guyana • Produced in accordance with the Demerara Rum Geographical Indication • Distilled from molasses in the Versailles wooden vat still (REV) from the former Versailles estate • Colored with caramel before barreling, as was tradition for Plantation Versailles marque REV • Aged 12 years in ex-bourbon casks • Waves of ripe tropical fruit led by grilled pineapple, ground coffee bean, and a touch of eucalyptus precede a palate brimming with cacao, clove, crème brûlée, and tapioca with a long, nutty finish • Bottled at a cask strength of 56.2% ABV Constructed in 1890 at Plantation Versailles, the Versailles still is a single wooden pot still primarily composed of greenheart wood, an evergreen almost exclusively found in Guyana that is prized for its density and durability. After moving to the Enmore Estate followed by the Uitvulgt Estate, the Versailles still eventually made its way to the Diamond Distillery, where it continues producing three heavy-bodied marques with a savory nuttiness that includes the REV—a variant of the VSG marque from the original Versailles estate that was historically aged with caramel coloring.
