• 50% Barbera, 35% Grenache, 15% Mourvèdre • Sourced from their estate vineyard in the western edge of the Upper Galilee at 800m ASL • Soils are composed of a gravelly flint (silex) clay • Destemmed and then gentle crushed directly into the press • Press performed at a very low pressure to produce delicate, free-run juice. • Natural fermentation at 18C • Aged 6 months on fine lees in concrete and stainless steel
