• Practicing Sustainable/Organic • 100% Riesling • Cedar Ranch Vineyard (Illinois Valley AVA) • 1500 ft. elevation • Alluvial galets stud the silty, sandy soil that is riddled with serpentine • Dry-farmed • The fruit is destemmed, crushed, and soaks on the skins for 3 hours • Nothing is added to the juice – no sulfur, nutrients, enzymes or yeast • Native fermentation takes place in egg, Austrian cask and neutral barrel • After nine months of lees contact, the wine is racked and blended • No cold stabilization • No residual sugar • 12.5% abv
