Redemption Aged Barrel Proof 9 Year Old High-Rye Bourbon, its latest barrel-proof selection (for the uninitiated, that means the whiskey is bottled at the strength it came out of the barrel, with no water added), is a high-rye bourbon (meaning there’s a lot of rye in the mash bill, as well as 60-percent corn) that’s been aged nine years—the same as Knob Creek, if you want a reference point. Nine years is a babe in the woods by Scotch-whisky standards; but for a bourbon, it’s a seasoned veteran of barrel aging in new American oak. You can really taste the wood here, with dry leather and pepper notes mixing with undertones of citrus.
