Crafted at Preservation Distillery in Portland, Oregon, this bourbon begins with a mash of 75% white winter wheat, 15% corn and 10% malted barley for a soft, elegant grain profile. Fermented in open-top fermenters using house-cultured yeast, the wort is distilled in a hybrid column and pot still to achieve both purity and character. The new American oak barrels are stored in the distillery's climate-controlled warehouse for a minimum of three years, during which time the coastal-influenced humidity encourages delicate extraction of vanilla, butterscotch and oak spice. The final bourbon displays a silky texture, gently toasted almond notes and a clean, bright finish.
