Made from Macabeo, Parellada, and Xarel-lo, the three varietals are fermented separately and then blended together. A second fermentation takes place in the bottle for more than 12 months. The result is a bright, straw yellow cava with medium-sized bubbles and smooth silky notes of fruits and slightly toasted brioche. Kosher for Passover.
