DESCRIPTION
Pascal Jolivet started in 1987 with no vineyards of his own, buying from growers he trusted; the domaine now runs to 120 hectares across Sancerre and Pouilly-Fumé. The blend is roughly half limestone, a third clay-limestone and a fifth flint, each soil vinified separately in stainless steel. White fruit and orchard flowers with a subtle smokiness, dry and mineral, with racy acidity and a saline thread.
