Vincenzo Paolucci created this in 1873 at Sora in Lazio, where the wild herbs of the Liri valley gave him his botanicals. The family still runs the business and the recipe is said never to have changed. Dried orange peel first, then gentian root, clove and a wisp of smoke, with cola and liquorice on the palate. Lighter and a touch sweeter than most amari, which makes it a good place to start.
