A junmai ginjo sake from SakeOne in Oregon, infused with Asian pear. Ripe yellow pear on the nose with melon and apple behind it, then a clean, full-bodied palate that stays just off dry. Milled to a 58 percent polish ratio, 12 percent alcohol. Good cold with cheese or pork, and it makes a decent saketini over ice.
