La Onda Cabernet Sauvignon/Merlot "Aguafiestas" 2020

Cabernet Sauvignon and Merlot from Smith Vineyard in Grass Valley, Sierra Foothills. This is an organic, dry-farmed site, with 40+ year old own-rooted vines, planted on granitic soils at 2,500 ft elevation. This Cabernet dominant co-ferment was built from many picks through the vineyard over weeks, with the new clusters continually added to the fermentation tank. The wine was transferred to neutral French oak for maturation and bottled unfined and unfiltered.

La Onda is part of the "New California" movement, using low-intervention methods, native yeasts, neutral oak, and minimal sulfur to showcase terroir. The Aguafiestas is a unique take on Cali Cab & Merlot with notes of sour cherry and pink peppercorns.
