• The pinnacle of the Aruga wines, with the richness of French Oak providing a contrast to the brightness of Koshu grapes. • A wine made for the nuances of Japanese cuisine, but reserved for it’s many delicacies like the dashi and mirin flavors of sukiyaki, chu-toro tuna, Wagyu beef, sea urchin, or even the delicate flavors of salmon roe. (Fish roe is said to be a difficult wine pairing but goes remarkably well with Koshu.) • Fermented for 2 weeks in French Oak, aged for additional 6 months in barrel, then bottle aged for an additional 2 years before release. Producer: Katsunuma Jozo • Prefecture: Yamanashi • 100% Yamanashi grown Koshu grapes • Fermented in French oak for 2 weeks, aged in barrels for 6 months, bottle aged for 2 years • ABV: 11%
