DESCRIPTION
J. Moreau et Fils is an old Chablis family house, founded in 1814 and now part of the Boisset group. Mont de Milieu is a Premier Cru vineyard of about 34 hectares on the right bank of the Serein river, in the villages of Fleys and Fye. Its slopes face south and get plenty of sun, which gives the wine more body than many Chablis.
This is 100% Chardonnay, gently pressed and fermented in stainless steel, then aged 12 months in oak barrels on its fine lees. Look for a pale gold color with green hints and a deep, structured palate. Mont de Milieu sits between the lean village wines and the rich Grand Crus, and it is one of the better value Premier Crus.
Serve it at 50-54F in a white wine glass. Oysters are the classic match, along with grilled fish, shrimp, goat cheese and chicken in a light cream sauce.
