Les Folatières is one of the best-known Premier Cru vineyards in Puligny-Montrachet, on the slope just below the Grand Crus. François Carillon comes from a family that has made wine in Puligny for generations and runs his own domaine there.
This is Chardonnay, and Puligny is known for the most precise, mineral style of white Burgundy. Expect citrus, white flowers and ripe orchard fruit, with a stony tension and a long, clean finish. It's elegant rather than buttery.
Serve it cool, around 52-54F, in a wide Burgundy glass, and don't over-chill it. Try it with lobster, scallops, turbot or roast chicken with morels. It will drink well now with some air and will reward a few years in the cellar.
