• Destilado de agave produced in Topiltepec, Guerrero • Maestro Mezcalero Silvestre González Garcia • Produced from 100% Papalote (A. cupreata) • Cooked in an earthen pit oven; milled with a small mechanical shredder • Fermented in white pine (ayacahuite) tanks using spring water • Distilled twice using traditional copper pot stills • Earth, cinnamon, nutmeg/baking spice, strawberry shrub, fresh biscuits, dates, baked apple turnover, candied yam, dusty bricks • 47.3% ABV A dense and earthy example of the species, built on a backbone of baking spice and apple pie in the best way. Like coming home to a toasty oven and a glass of fine spirits, this is mezcal for cold weather if there ever was one.
