Estate-grown in the Russian River's cooler sub-appellations, these Sauvignon Blanc grapes are hand-picked at dawn to lock in acidity. After whole-cluster pressing, the juice ferments in stainless steel at 55°F, then rests three months on fine lees for added weight and texture. A final light filtration preserves freshness and aromatics.
