• 63% Chenin Blanc & 37% Verdelho • The Chenin Blanc comes from 41 year old, dryland-farmed bush vines in the Paardeberg, Swartland • The Verdelho is from two sites: the Voor Paardeberg, where vines are grown in decomposed granite and clay, and a Bot River vineyard on Bokkeveld shale • Hand harvested • Grapes were gently whole bunch basket-pressed • Fermented with indigenous yeast in 400L & 225L French oak • Some fine lees contact was added back to the juice in the barrel • 100% malolactic fermentation • Total of 10 months in old French oak • Bottled unfined
