• Practicing Organic & Sustainable • 100% Cabernet Franc • Detert-clone Cabernet Franc from the original 1949 planting • Detert Family Vineyards (Oakville AVA) • Part of Historic To-Kalon Vineyard • Alluvial, Coombs gravelly loam; very deep, well-drained soils • Hand-harvested • Multiple small lot fermentations (1 to 2.5 tons fermenters) • Some lots spent 10-14 days on the skins for freshness and primary aroma development • Some lots spent 20-30 days on the skins for tannin and secondary flavor development • Combination of punch downs and pumpovers applied • Aged 18 months in 225L French oak (60% new) • 14% abv
