• Small batch Kentucky straight bourbon whiskey produced by Preservation Distillery in Bardstown, Kentucky • Undisclosed wheated mash bill column distilled at an undisclosed Kentucky distillery • Aged 6–8 years in heavily charred new American oak barrels with a proprietary toast; non-age statement • Blended in micro-batches of 1–3 barrels • Aromas of dry tobacco, challah, gooseberries, fresh butter, and golden raisins lead to an invigorating spike of Saigon cinnamon on the mid-palate and a hint of cherries on the finish • Non-chill filtered; 55.6% ABV (ABV may vary slightly batch to batch) While Cock of the Walk is contract distilled with the same mash bill as Preservation’s estate wheated bourbon, it undergoes a very different cask regimen in Preservation’s warehouse, aimed at amplifying the bourbon’s spicy character. Bright and bold, this bourbon makes an enlivening dram.
