• Small batch Kentucky straight bourbon whiskey produced by Preservation Distillery in Bardstown, Kentucky • Distilled at Preservation Distillery from an undisclosed wheated mash bill • Grains sourced from local farms including Affinity Farms in New Haven, Kentucky • Sweet mash fermented in 1000-gallon stainless steel fermenters for 3–5 days using ambient and proprietary yeast • Double distilled in copper pot stills • Barrel-entry proof of 105 • Aged a minimum 6 years in new American oak barrels with varying toast and char levels; non-age statement • Proofed with water from the estate’s limestone-fed aquifer • Blended in micro-batches of 1–3 barrels • A nose of hay, toasted almonds, sawdust, and cornbread with wildflower honey lead to chamomile and endive on the palate with fresh green apple and lime oil on the finish • Non-chill filtered; 50.9% ABV (ABV may slightly vary batch to batch) Wattie Boone & Son’s aging regimen involves a proprietary combination of barrels with a heavy toast and low char to feature the inherent qualities of the oak. Indeed, this bourbon calls to mind wildflowers, orchard fruit, and fresh hay, conjuring a sun-drenched flavor profile distinct from its Preservation bourbon compatriots.
