Amontillado is Principe, Barbadillo A dry sherry made of Palomino grapes and ages for many years. During the long ripening wines, only a natural process undergoes a special yeast culture (bloom) and then a long oxidation process after the solera method on oak barrels.
The color is yellow, and the smell and flavor finds elements of nuts and almonds, something that is classic for Manzanilla wines. Served as aperitif or with soup, game and stored cheeses
