DESCRIPTION
The grapes were selected when the flavor and acid balance was optimal then hand-sorted and gently pressed. This wine goes through cold settling for 12 hours. The juice is then fermented for 20 days. 75% of the wine has been fermented in small cement vats and 25% in new French oak barrels, medium toast. 30% does not undergo malolactic fermentation to enhance freshness. Deeply aromatic with expressive citrus and tropical fruit aromas and rich mineral notes
